Start planning your holiday feast early with this retro Sweet Potato Casserole recipe from Snaxtime! This supremely decadent sweet potato treat is extremely rich with earthy spices, sweet brown sugar, nutty pecans and gooey marshmallows. The secret to this deluxe dish is a touch of sour cream that adds creaminess and a li'l tang.
This casserole goes great with turkey or ham or just by itself. Your guests will be lining up for seconds and thirds!
Ingredients:
3 large sweet potatoes
1 cup sugar
2 eggs
1/2 cup salted butter, melted
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup sour cream
Topping:
1/2 cup brown sugar
1/4 cup flour
3 tablespoons salted butter, melted
1 cup chopped pecans
3-4 cups mini marshmallows
Directions:
Pierce the sweet potatoes with a fork. Bake them at 400 degrees for 45 minutes to an hour or until soft. Cool.
Preheat your oven to 325 degrees.
Combine all of the ingredients in a mixing bowl (except for the topping ingredients and marshmallows). Beat with an electric mixer until smooth. Pour into a greased medium sized casserole dish.
Mix together topping ingredients with a fork until well combined. Sprinkle topping over sweet potato mixture.
Bake for 20 minutes. Sprinkle marshmallows over the top and then bake an additional 10 minutes or until marshmallows are melted and golden.
