Chocolate Chip Macadamia Cheesecake Bars Recipe
Be the star of the potluck with these smooth and dreamy cheesecake bars! Bursting with vanilla flavor, nutty macadamias and rich chocolate, these bars will have 'em lining up for refills.
Ingredients
Crust:
1 3/4 cups vanilla wafer crumbs
3/4 cup finely chopped, roasted, salted macadamia nuts
1/2 cup firmly packed brown sugar
1 stick salted butter, melted
Filling:
2 (8-ounce) packages cream cheese, softened
3/4 cup granulated sugar
3 large eggs
3/4 cup sour cream
2 tsp vanilla extract
1/2 cup semisweet chocolate morsels
1/4 cup finely chopped, roasted, salted macadamia nuts
Directions
Preheat oven to 300 degrees F. Line a 13X9 baking dish with aluminum foil making sure to cover all sides with the foil. Combine the crust ingredients together with a fork until well blended. Evenly press the crumb mixture onto the bottom of the baking dish. Bake for 8 minutes then cool.
In a large mixing bowl, use an electric mixer to cream together the sugar and cream cheese. Add the eggs one at a time until the mixture is smooth and creamy. Add the vanilla and sour cream and mix until well blended. Pour the cheesecake filling onto the crust. Sprinkle with chocolate chips. Bake for 45-50 minutes until set. Remove from the oven and sprinkle the remaining macadamia nuts over the top. Cool completely on a wire rack then refrigerate before cutting the bars. Store in the refrigerator.
